Update blog post image to a newer version

Update the cover image path for a blog post from `/uploads/anita-hofmann.jpg` to `/uploads/anita-hofmann-v2.jpg` in `server/seed.ts` and add the new image file `client/public/uploads/anita-hofmann-v2.jpg`.
